Bonfire Cupcakes Recipe.


It was recently bonfire night here in the UK so I thought I'd share a recipe with you that I created myself.
I had given just a simple method for making the cake batter however feel free to use your own method of making the mixture; I know most people have their own way, from a family recipe etc.

Ingredients:

For the cakes:
- 4oz/113g Butter
-4oz/113g Sugar (I used Golden Caster Sugar, but any type will work fine, brown sugar will give a richer flavour.)
-4oz/113g Self-raising Flour
-2 eggs (medium size)
-1/2 tsp Mixed spice
- 1/2 tsp Cinnamon

For the buttercream:

-4oz Icing Sugar
-2oz Butter
-1 tsp Black Treacle
-1/2 tsp Vanilla Essence or Bean Paste
-Small amount of Milk, if needed

Method

1. Preheat your oven if required, to 180 degrees C/350 degrees F/Gas mark 4.

2. Beat the butter and sugar together until pale and fluffy in a large mixing bowl.

3. Whisk the eggs together in a small bowl or jug and sift the flour, cinnamon and mixed spice into another small bowl.

4. Whisk a small amount of the eggs with the butter and sugar, then add a bit more and keep doing so until all the egg has gone. Repeat with the flour mixture. The end result should be light and fluffy.

5. Spoon your batter into a lined muffin/cupcake tray. Cook for about 15 mins or until they are firm but springy to touch.

To make the butter cream:

1. Put the butter in a medium sized bowl, it should be soft but if not just place the bowl in the microwave for a few seconds. Then add the icing sugar, vanilla essence/bean paste and black treacle.

2. Whisk the mixture until combined and smooth; there should be no lumps. If the icing is a bit hard you can add a bit of milk until it is the right consistency.

3. Now you can top your cakes! Either piping or spreading works fine.



Tips: 
  • If you don't like treacle or simply don't have it in, you can replace it with 1/4 tsp of cinnamon and 1/4 tsp of mixed spice.
  • Topping with edible gold glitter gives a firework-like finish
