Cheesy Pesto Melt Recipe

Here is a recipe of how to make a quick lunch snack. It is a great way to use up some leftovers from your fridge, cream cheese could be used instead of mascarpone.

Ingredients:

- 1 tsp Tomato Puree
- 2tsp Mascarpone Cheese

- 2tsp Green Pesto

- a slice of bread
- 2 tbsp Smoked and/or Cheddar cheese
- Black olives (optional)


1. Toast bread fully on one side under the grill and then turn over and toast lightly on the other.
2. Spread the lighter toasted side with the tomato puree then top with the Mascarpone and Pesto.
3. Grate the Cheese/s on top and top with the olives, if using.
4. Grill until melted.
